Quick Rhubarb Compote with Greek Yoghurt and Toasted Oats
A fast, vibrant breakfast that comes together in under 20 minutes and makes the most of early-season rhubarb. The compote is warm, pink and gently sweet, spooned over cool thick yoghurt and finished with crunchy toasted oats and a drizzle of honey. It is simple, but it is genuinely one of the best ways to start the day when your rhubarb patch is going.

Ingredients
- 500 g rhubarb, trimmed and cut into 3cm pieces
- 50 caster sugaror use honey
- 1 orange zest, finely grated zest only
- 2 tbsp orange juice
- 1 tsp vanilla extract
- 80 g jumbo rolled oatsuse certified gluten-free oats if required
- 10 g unsalted butteror use coconut oil to make dairy-free
- 1 tbsp runny honey
- 600 full-fat Greek yoghurtor use coconut yoghurt for dairy-free
- 2 tbsp runny honey, to serve (optional)

Method
- Put the rhubarb, caster sugar, orange zest, orange juice and vanilla extract into a medium saucepan. Stir briefly, then place over a medium heat. Cook, stirring occasionally, for 8–10 minutes until the rhubarb has completely collapsed and the compote is thick and vivid pink. Remove from the heat.About 10 min
- While the compote cooks, melt the butter in a small frying pan over a medium heat. Add the oats and cook, stirring frequently, for 4–5 minutes until they are golden and smell nutty. Watch them carefully as they can catch quickly at the end. Tip onto a plate.About 5 min
- Spoon the Greek yoghurt into four bowls. Top each with a generous spoonful of the warm rhubarb compote, then scatter over the toasted oats.About 2 min
- Drizzle each bowl with a little runny honey if using and serve immediately.
Tips
- The compote thickens as it cools, so pull it off the heat when it looks slightly looser than you want. It will be perfect by the time it hits the yoghurt.
- Make a big batch of compote at the weekend — it keeps in the fridge for five days and turns a plain breakfast into something genuinely good all week.
- Jumbo oats toast better than standard rolled oats here. They stay crunchier on the yoghurt for longer.
Ring the changes
- Stir a pinch of ground cardamom into the compote with the sugar for a Scandinavian-inspired version.
- Replace the toasted oats with 40g of toasted flaked almonds for a gluten-free finish — but remove the gluten-free tag from the oats and update allergens to include nuts.
Keeping it
The compote keeps in a sealed jar in the fridge for up to 5 days. The toasted oats are best made fresh as they soften if stored with the compote. Serve the compote cold straight from the fridge or warmed gently in a saucepan.
