Smashed Radish Salad with Chilli, Garlic and Rice Vinegar
Smashing radishes rather than slicing them opens up their texture so they absorb dressing like a sponge and develop craggy edges that catch every bit of the punchy garlic and chilli dressing. Ingredients
- 500 g radishes, trimmed, smashed with the flat of a knife and roughly broken into chunks
- 2 garlic cloves, minced to a paste
- 1 fresh red chilli, finely sliced, seeds removed if you prefer less heator use 0.5 tsp dried chilli flakes
- 2 tbsp rice vinegar
- 1 tbsp tamari soy sauce
- 1 tsp caster sugar
- 2 tsp sesame oil
- 1 tsp fine salt
- 2 tsp toasted sesame seeds
- 15 g fresh coriander, roughly torn (optional)

Method
- Place the trimmed radishes on a chopping board. Press down firmly on each one with the flat side of a large knife until it cracks and splits open. Tear or roughly chop each smashed radish into 2 or 3 uneven pieces and put them in a bowl.About 4 min
- Sprinkle the salt over the smashed radishes, toss well and set aside for 5 minutes. This draws out a little excess water and seasons them from the inside.About 5 min
- Meanwhile, whisk together the rice vinegar, tamari, caster sugar, sesame oil and minced garlic in a small bowl until the sugar dissolves.About 1 min
- Tip the radishes into a sieve, rinse briefly under cold water to remove the excess salt, and shake dry. Pat gently with a clean tea towel.About 1 min
- Toss the radishes with the dressing, sliced chilli and sesame seeds. Taste for seasoning — add a splash more vinegar if it needs brightness. Scatter over the coriander if using and serve immediately.
Tips
- The smashing step is not optional — it genuinely changes the texture and the way the radishes drink up the dressing. A smooth-cut surface just does not do the same job.
- Do not skip salting the radishes, but do not leave them too long either. Five minutes is enough — much longer and they start to go limp.
- This salad does not hold well once dressed. Make it just before you want to eat it.
Ring the changes
- Add a 1cm piece of fresh ginger, grated, to the dressing alongside the garlic for more warmth and complexity.
- Serve alongside cold poached chicken or sliced leftover roast pork — the punchy acidity cuts beautifully through rich meat.
Keeping it
Best eaten the moment it is made. If you must store it, keep the radishes and dressing separate in the fridge for up to 4 hours and combine just before serving.
