Blue Potato Hash with Fried Egg

A stunning breakfast hash of crushed blue potatoes crisped in a cast-iron skillet with caramelized onions, roasted red pepper, and smoked paprika. Ingredients

  • 1 lb blue potatoes, boiled until just tender, roughly crushed
  • 1 yellow onion, thinly sliced
  • 1 roasted red pepper, from a jar, sliced
  • 1 tsp smoked paprika
  • 3 tbsp olive oil
  • 2 eggs
  • 2 cloves garlic, minced
  • ¾ tsp salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped (optional)

Method

  1. Heat 2 tbsp olive oil in a cast-iron skillet over medium-high heat. Add onion and cook 8 minutes, stirring occasionally, until caramelized and golden.About 8 min
  2. Add garlic and smoked paprika and cook 1 minute. Add the crushed potatoes and press into an even layer with a spatula.About 2 min
  3. Cook undisturbed for 5 minutes until a golden crust forms on the bottom. Flip sections with a spatula, press again, and cook 5 more minutes.About 10 min
  4. Stir in roasted red pepper and season with salt and pepper. Push hash to the sides and add remaining oil to the centre.About 2 min
  5. Fry eggs in the cleared centre, basting with the hot oil, until whites are set and yolks are still runny, about 3 minutes. Scatter parsley and serve from the skillet.About 3 min

Tips

  • Boil the potatoes ahead of time and refrigerate overnight — cold potatoes give the best hash crust.
  • Pressing and not stirring is the key to getting crunchy crusts rather than a soft scramble.
  • The blue-purple pigment will stain the pan slightly — this is normal and washes off.

  • Add diced chorizo at step 2 for a meatier hash.
  • Top with avocado and a squeeze of lime for a Southwestern twist.

Keeping it
