Blueberry Lemon Muffins

Tall, bakery-style muffins packed with juicy rabbiteye blueberries and bright lemon zest. The secret is a thick batter that bakes up with a high domed top, and a sparkling sugar crust that shatters beautifully. Excellent still warm from the oven, and equally good the next morning.

Ingredients

  • 1¾ cups fresh rabbiteye blueberries
  • 2¼ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ¾ cup granulated sugar
  • 2 tsp lemon zest
  • 2 large eggs
  • ¾ cup whole milk
  • ½ cup unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 2 tbsp coarse sugar, for topping (optional)

Method

  1. Preheat oven to 425°F. Grease a 12-cup muffin tin generously or line with paper cups.About 5 min
  2. Whisk flour, baking powder, baking soda, salt, and sugar together. Add lemon zest and rub it in with fingertips to release its oils.About 3 min
  3. In a separate bowl, whisk eggs, milk, melted butter, and vanilla. Pour into the dry ingredients and stir until just combined — a few lumps are fine. Fold in blueberries.About 3 min
  4. Divide batter evenly among the 12 cups — they should be nearly full. Sprinkle coarse sugar over each. Bake at 425°F for 5 minutes, then reduce to 375°F and bake for 17 more minutes until domed and golden and a toothpick comes out clean.About 22 min
  5. Cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.About 5 min

Tips

  • The high initial oven temperature creates the dramatic domed top — don't skip it.
  • Don't overmix — stir just until no dry streaks remain or muffins will be tough.
  • Toss blueberries in 1 tsp flour before folding in to prevent them sinking to the bottom.
