Caramel Apple Tart
This elegant French-style apple tart features thinly sliced apples fanned in concentric circles over a buttery almond cream filling in a golden tart shell, finished with a warm caramel glaze that makes it shine like a jewel. It is the kind of dessert that looks bakery-professional but is entirely achievable at home with a little patience. The apples are the canvas for the whole composition.

Ingredients
- apples (Golden Delicious or Fuji), peeled, cored and very thinly sliced
- store-bought or homemade tart shell (9-inch), pre-baked
- tablespoons unsalted butter, softened
- cup sugar, divided
- cup almond flour
- eggs
- teaspoon vanilla extract
- tablespoons heavy cream
- tablespoon lemon juice
- teaspoon cinnamon
- tablespoons apricot jam (for glazing)
Contains: cereals gluten, milk, eggs, nuts.
Method
- Preheat oven to 375°F.
- Make the almond cream: beat softened butter and 1/2 cup of the sugar until pale. Beat in eggs one at a time, then vanilla. Fold in almond flour. Spread into the pre-baked tart shell.
- Toss apple slices with remaining sugar, lemon juice, and cinnamon.
- Arrange apple slices in overlapping concentric circles over the almond cream, starting from the outside edge.
- Bake for 40–45 minutes until the apples are tender and the almond cream is set and golden.
- Warm apricot jam with a tablespoon of water. Brush generously over the apples while the tart is still warm for a shiny glaze.
- Cool for 20 minutes before slicing. Serve with whipped cream or crème fraîche.
Tips
- Use a mandoline to slice the apples wafer-thin (about 2mm) for the most elegant, even fan.
- The apricot glaze is essential — it transforms a good tart into a spectacular one.
Ring the changes
- Add a tablespoon of Calvados (apple brandy) to the almond cream for a French-inspired depth.
- Use a mix of green and red apples for a colourful, striped top.
Keeping it
Store at room temperature for up to 1 day or refrigerate for up to 2 days. Best served slightly warm or at room temperature.

The quintessential American dessert: a golden, double-crust pie filled with cinnamon-spiced tender apple slices in a lightly thickened, fragrant juice that bubbles up through the lattice lid as it bakes. The apples are the undisputed centre of this recipe — sliced thin, spiced simply, and allowed to speak for themselves. Serve warm with vanilla ice cream for the full American experience.
