Classic American Carrot Cake

Ingredients
- 3 cups carrots, freshly grated (about 1 lb carrots)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 1 cup vegetable oil
- 4 large eggs, room temperature
- 8 oz crushed pineapple, well-drained

- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- 8 oz cream cheese, room temperature
- ½ cup unsalted butter, room temperature (1 stick)
- 3 cups powdered sugar, sifted
- 2 teaspoons vanilla extract, divided

Method
- Preheat oven to 350°F. Grease and flour two 9-inch round cake pans (or line with parchment). Whisk flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt together in a large bowl.About 5 min
