Grilled Lamb Chops with Mint Gremolata

Ingredients

  • lamb loin chops (about 1 inch thick)
  • cup fresh mint leaves, finely chopped
  • cup flat-leaf parsley, finely chopped
  • teaspoons lemon zest
  • garlic cloves, minced to a paste
  • tablespoons olive oil
  • teaspoons kosher salt
  • teaspoon black pepper, freshly ground
  • teaspoon red pepper flakes

Method

  1. Make the gremolata: combine chopped mint, parsley, lemon zest, garlic, 2 tablespoons of olive oil, and red pepper flakes. Season lightly with salt. Set aside.
  2. Season lamb chops generously on both sides with kosher salt and pepper. Rub with remaining 2 tablespoons of olive oil.
  3. Heat a grill or cast-iron grill pan over high heat until very hot. Oil the grate lightly.
  4. Grill lamb chops for 3–4 minutes per side for medium-rare (internal temperature 130°F).
  5. Rest the chops on a plate for 5 minutes.
  6. Spoon gremolata generously over the chops and serve immediately.
