Ingredients
- ripe but firm peaches
- oz burrata cheese
- tbsp olive oil
- tbsp honey
- tbsp balsamic glaze
- cup fresh basil leaves
- tsp flaky sea salt
- tsp black pepper
- tbsp crushed pistachios
- cup arugula

Method
- Preheat grill or grill pan to medium-high heat.
- Brush peach halves with olive oil on the cut side.
- Place cut-side down on the grill and cook without moving for 3-4 minutes until grill marks appear and peaches are slightly softened.
- Flip and grill 2-3 minutes more. Remove and let cool slightly.
- Arrange arugula on a serving platter if using. Place burrata in the center and gently tear it open.
- Arrange grilled peaches around the burrata.
- Drizzle honey and balsamic glaze over everything. Scatter basil leaves and crushed pistachios.
- Finish with flaky sea salt and cracked black pepper. Serve immediately.
Tips
- Use peaches that are ripe but still slightly firm — very ripe peaches will fall apart on the grill.
- The burrata should be at room temperature for the best creamy texture.
