New Potato and Asparagus Sheet Pan Dinner

A celebration of early summer produce — new potatoes and asparagus roasted together on a sheet pan with lemon and herbs, served with a creamy herb dipping sauce. Two seasonal crops that peak simultaneously, cooked side by side, needing almost no preparation. A weeknight dinner that tastes like a farmers market.

Ingredients

  • 1½ lbs new potatoes, halved
  • 1 lb asparagus, woody ends snapped off
  • 4 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 3 tbsp fresh dill, chopped
  • ½ cup sour cream, for dipping sauce
  • 1 tsp Dijon mustard, for dipping sauce
  • 1 tsp salt and pepper, to taste

Method

  1. Preheat oven to 425°F. Toss new potatoes with 2 tbsp olive oil, garlic, salt, and pepper. Spread on a large baking sheet. Roast for 15 minutes.About 17 min
  2. Add asparagus to the sheet pan, tossing with remaining olive oil. Roast 12 to 15 more minutes until both potatoes are golden and asparagus is tender.About 15 min
  3. While vegetables roast, make herb dipping sauce: mix sour cream, Dijon, half the dill, lemon zest, and a pinch of salt.About 3 min
  4. Remove pan from oven. Squeeze lemon juice over everything. Add remaining dill.About 2 min
  5. Transfer to a platter and serve with the herb dipping sauce alongside.About 2 min

Tips

  • Add the asparagus partway through — it cooks faster than potatoes
  • New potatoes' thin skins caramelize beautifully at high heat
