Passionfruit Iced Tea
A jewel-bright, refreshing iced tea sweetened with a fresh passionfruit syrup that packs more flavor than anything from a bottle. Perfect for porch sitting in late summer. Looks as good as it tastes and takes 20 minutes including cooling time.

Ingredients
- 6 passionfruit, pulp scooped out
- 4 black tea bagsGreen tea works well too
- 4 cups boiling water
- ¼ cup granulated sugarUse honey or agave for variation
- 2 cups cold water
- 2 tbsp lime juice, freshly squeezed
- 4 fresh mint sprigs, for garnish (optional)
- 4 cups ice
Method
- Steep tea bags in boiling water for 4 minutes. Remove bags and stir in sugar until dissolved. Let cool to room temperature, then refrigerate.About 5 min
- Strain passionfruit pulp through a fine-mesh strainer into a bowl, pressing to extract all juice. Reserve a few teaspoons of seeds for garnish.About 5 min
- Stir passionfruit juice, lime juice, and cold water into the chilled tea. Taste and adjust sweetness.About 2 min
- Fill glasses with ice. Pour passionfruit tea over ice. Garnish with a few passionfruit seeds and a sprig of mint.About 3 min
Tips
- Don't steep tea for more than 5 minutes or it becomes bitter.
- The seed garnish looks beautiful and signals the flavor — keep a tablespoon of seeds back from straining.
- Make a big pitcher the night before and refrigerate — the flavors meld and improve overnight.
