Ingredients
- 2 lbs red skin potatoes, baked whole until completely tender
- 1½ cups all-purpose flour, plus more for dusting
- 1 large egg
- ¼ cup Parmesan cheese, finely grated
- 1 tsp salt
- 5 tbsp butter
- 12 fresh sage leaves
- 1 tsp lemon juice
