Roasted Grape and Brie Crostini

Ingredients
- cups red seedless grapes, left whole or halvedAny grape variety works; Concord grapes are exceptional
- medium baguette, sliced into ½-inch rounds
- oz brie cheese, rind removed, slicedCamembert or goat cheese work well
- cup toasted walnuts, roughly chopped
- tbsp honey
- tsp fresh thyme leaves (optional)
- tbsp olive oil
- tsp balsamic vinegar (optional)

Method
- Preheat oven to 400°F. Toss grapes with 1 tbsp olive oil and a pinch of salt on a baking sheet. Roast for 18–20 minutes until softened, blistered, and beginning to caramelize.About 20 min
- Meanwhile, brush baguette slices with remaining olive oil and toast in the oven for 8–10 minutes until golden and crisp.About 10 min
- Top each crostini with a slice of brie. Return to the oven for 2–3 minutes until the cheese is just starting to melt.About 3 min
- Spoon warm roasted grapes over the brie. Scatter walnuts and thyme. Drizzle with honey and balsamic if using. Serve immediately.About 3 min
Tips
- Don't crowd the grapes on the baking sheet or they'll steam instead of caramelize.
- The grapes can be roasted up to 2 hours ahead; reheat briefly before serving.
- Use a runny, room-temperature brie for the creamiest result.
