Scallion and Cheddar Biscuits

Ingredients
- 5 scallions, thinly sliced
- 8½ oz all-purpose flour
- 1 tbsp baking powder
- ¾ tsp salt
- 4 oz cold unsalted butter, cut into cubes
- 4¼ oz sharp cheddar cheese, grated
- ¾ cups cold buttermilkor whole milk with 1 tsp vinegar

Method
- Preheat oven to 425°F (220°C). Whisk together the flour, baking powder, and salt in a large bowl.About 2 min
- Add the cold butter and work it in with your fingers until the mixture looks like rough crumbs with some pea-sized pieces remaining.About 5 min
- Stir in the cheddar and scallions. Pour in the buttermilk and stir with a fork until the dough just comes together — don't overwork it.About 2 min
- Turn onto a lightly floured surface, pat to about 3/4 inch thick, and cut into rounds with a floured cutter or glass. Place on a baking sheet.About 4 min
- Bake for 16-18 minutes until risen and golden. Serve warm.About 18 min
