Tomatillo Guacamole

Guacamole elevated with finely diced fresh tomatillos that add a bright, tangy snap to each bite — a revelation for anyone who thought standard guacamole couldn't be improved. The tomatillos bring acidity, freshness, and a textural interest that makes this guacamole genuinely special. Make it at the peak of summer when both avocados and tomatillos are at their best.

Ingredients

  • 4 medium tomatillos, husked, finely diced
  • 4 large ripe avocados
  • ¼ medium white onion, finely diced
  • 1 jalapeño, seeded and minced
  • 3 tbsp fresh cilantro, finely chopped
  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • 1 tsp salt

Method

  1. Halve and pit avocados. Scoop flesh into a bowl. Add lime juice and salt. Mash to your preferred texture — chunky is best.About 5 min
  2. Fold in tomatillos, onion, jalapeño, cilantro, and garlic. Taste and adjust salt and lime.About 5 min
  3. Serve immediately with tortilla chips.About 2 min

Tips

  • Choose tomatillos that are firm — soft ones will make the guacamole watery.
  • Dice the tomatillos very finely so they integrate into each bite rather than dominating.
  • Press plastic wrap directly onto the surface to prevent browning if making ahead.

Ring the changes

  • Roast the tomatillos and blend for a smoother, more integrated flavor.
  • Add diced mango for a tropical, sweet-tangy version.

Keeping it

Best eaten within 2 hours. Plastic wrap pressed to the surface slows browning.
