Watermelon Agua Fresca
Mexico's perfect summer drink — blended watermelon strained into a cool, lightly sweet agua fresca with lime and a hint of mint. This hydrates better than almost anything else on a hot day and is infinitely more flavourful than any bottled drink. Takes 10 minutes.

Ingredients
- 8 cups watermelon, cubed, seeds removed
- 2 cups water
- 2 lime, juiced
- 2 tbsp sugar, or to taste
- 6 leaves fresh mint (optional)
- 1 pinch of salt
- 4 cups ice
Method
- Blend watermelon in batches until completely smooth.About 3 min
- Strain through a fine mesh sieve into a large pitcher, pressing to extract maximum juice. Discard pulp.About 3 min
- Stir in water, lime juice, sugar, and salt. Taste and adjust sweetness. Add mint leaves if using. Serve over ice.About 2 min
