Blueberry Cheesecake
A no-bake British cheesecake with a crunchy digestive biscuit base, a light and creamy vanilla cream cheese filling, and a vivid blueberry compote topping. Simple to make and magnificent to look at, this is the ideal make-ahead party dessert that delivers every time.

Ingredients
- 250 digestive biscuits
- 100 g unsalted butter, melted
- 500 g full-fat cream cheese
- 200 ml double cream
- 80 icing sugar
- 1 tsp vanilla extract
- 1 lemon zest
- 350 g fresh blueberries
- 50 caster sugar
- 1 tbsp lemon juice

Method
- Blitz the digestive biscuits to fine crumbs. Mix with the melted butter and press firmly into the base of a 23 cm springform tin. Chill for 30 minutes.
- Beat the cream cheese, icing sugar, vanilla, and lemon zest until smooth.
- Whip the double cream to soft peaks in a separate bowl. Fold into the cream cheese mixture.
- Spread over the biscuit base, smooth the top, and chill for at least 4 hours or overnight.
- Make the topping: cook 250 g of the blueberries with the caster sugar and lemon juice for 5 minutes until they burst and form a sauce. Cool completely.
- Release the cheesecake from the tin. Spoon the blueberry sauce over the top and scatter with the remaining fresh blueberries. Serve immediately.
Tips
- Press the biscuit base very firmly with the back of a spoon or a flat-bottomed glass to prevent it crumbling when serving.
- The cheesecake must be chilled for a minimum of 4 hours — overnight gives the best, firmest result.

- Swirl 2 tablespoons of blueberry jam through the cheesecake filling before chilling for a ripple effect.
Keeping it
Keep refrigerated. Best eaten within 3 days of making. Do not freeze.
