Classic BLT Sandwich
The benchmark for every other sandwich. When main season tomatoes are at their peak, a BLT isn't just a sandwich — it's the reason summer exists. Thick slices of ripe tomato, crispy bacon, iceberg lettuce, and just enough mayonnaise on well-toasted bread. No substitutions. No improvements.

- 4 leaves iceberg lettuce
- 3 tbsp mayonnaise
- 1 pinch flaky sea salt
- 1 pinch black pepper, freshly ground

- Toast bread until golden. Spread mayonnaise on both slices.About 3 min
- Season tomato slices with flaky salt and a grind of pepper. Layer in order: lettuce on the bottom slice, then tomatoes, then bacon. Close the sandwich. Cut diagonally and serve immediately.About 3 min
Tips
- The only rule: use the best tomatoes you can find at peak season. Nothing else matters.
- Season the tomato slices directly before building the sandwich — salt draws out moisture and enhances flavor.
- Some people swear by Duke's mayo, others by Hellmann's — use what you love.
Ring the changes
- Add avocado slices for a BLAT — the creaminess is genuinely wonderful.
- Use a toasted sourdough or a brioche bun for a more substantial sandwich.
Keeping it
Eat immediately — the lettuce wilts and bread goes soggy within minutes of assembling.

These are not a side dish — they're a condiment, a topping, a pizza sauce, a pasta sauce, a bruschetta base. Make a huge batch while tomatoes are at their best.
