Ingredients
- 2 lbs main season tomatoes, halved — use a mix of sizesCherry tomatoes work beautifully
- ¾ cup olive oil
- 8 cloves garlic, peeled and left whole
- 5 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 bay leaves
- ½ tsp red pepper flakes (optional)
- 1 tsp sugar
- 1 tsp salt

Method
