Fresh Raspberry Fool
The most honest raspberry dessert: fresh berries crushed and swirled through barely-sweetened whipped cream into a cloud of pink-and-white perfection. A fool is the dessert you make when the raspberries are at their absolute peak and you don't want to do anything that might distract from them. Ingredients
- 2 cups fresh raspberries, divided
- 2 cups heavy cream, cold
- 3 tbsp powdered sugar, divided
- ½ tsp vanilla extract
- ½ tsp lemon zest (optional)

Method
- Crush 1.5 cups of raspberries in a bowl with 1 tbsp powdered sugar. Some should be smooth, some chunky.About 3 min
- Whip cream to soft peaks with remaining powdered sugar and vanilla.About 5 min
- Fold crushed raspberries into the cream in 2-3 additions, keeping the mixture streaky — don't fully blend.About 3 min
- Spoon into glasses and top with whole raspberries and lemon zest.About 4 min
Tips
- Keep the cream and raspberries cold — warmth makes the fool lose its lightness.
- The streaky, unblended look is the goal — fully mixed becomes pink whipped cream.
- Make this no more than 30 minutes before serving.
