Raspberry and Chocolate Pavlova

A showstopper dessert: a crispy meringue shell with a marshmallow interior, drizzled with dark chocolate and heaped with whipped cream and fresh raspberries. The tartness of the raspberries cuts through the sweetness of the meringue and the richness of the chocolate in a perfect three-way balance. This is the kind of dessert that gets applause when it comes to the table.

Ingredients

  • 2 cups fresh raspberries
  • 6 large egg whites, at room temperature
  • 1½ cups granulated sugar
  • 1½ cups heavy cream, cold
  • 2 oz dark chocolate, melted
  • 1 tsp white wine vinegar
  • 1 tsp cornstarch
  • 2 tbsp powdered sugar, for cream
  • 1 tsp vanilla extract

Method

  1. Preheat oven to 300°F. Draw a 9-inch circle on parchment and flip it over on a baking sheet. Whip egg whites to soft peaks. Gradually add sugar, beating to stiff, glossy peaks. Fold in vinegar and cornstarch.About 15 min
  2. Spread meringue onto the circle, building up the edges to create a nest. Bake for 1 hour. Turn off oven and leave inside for 30 more minutes. Cool completely.About 95 min
  3. Drizzle melted chocolate over the cooled meringue. Whip cream with powdered sugar and vanilla to soft peaks.About 8 min
  4. Spoon whipped cream into the center. Pile raspberries over the cream. Serve immediately.About 5 min

Tips

  • Any trace of fat or yolk in the egg whites will prevent them from whipping — use a spotlessly clean bowl.
  • The meringue will crack as it cools — this is normal and beautiful.
  • Assemble close to serving time so the meringue stays crispy.

Ring the changes

  • Use passionfruit curd under the cream for a tropical pavlova.
  • Mix raspberries with sliced strawberries and fresh mint.

Keeping it

Baked meringue shell keeps at room temperature in a dry place for 2 days. Assemble just before serving.
