Grape Focaccia (Schiacciata all'Uva)

An Italian harvest bread where wine grapes are pressed into a sweet, oily focaccia dough and baked until caramelized and fragrant. Traditionally made during the grape harvest in Tuscany, this version uses whatever wine grapes you can get hold of. The combination of sweet grapes, olive oil, rosemary, and sea salt is extraordinary.

Ingredients

  • 2½ cups wine grapes, halved, seeded if needed
  • 2 cups all-purpose flour
  • 1 tsp instant yeast
  • ¾ cup warm water
  • 4 tbsp olive oil, divided
  • 3 tbsp granulated sugar
  • ¾ tsp salt
  • 1 tbsp fresh rosemary, leaves only
  • ½ tsp flaky sea salt, for finishing

Method

  1. Mix flour, yeast, and salt. Add warm water and 2 tbsp olive oil and mix to a rough dough. Knead for 5 minutes until smooth. Cover and rest for 30 minutes.About 8 min
  2. Preheat oven to 425°F. Drizzle a baking sheet with 1 tbsp olive oil. Stretch dough onto it to form a rectangle about ½ inch thick.About 5 min
  3. Press half the grape halves cut-side down into the dough. Sprinkle with half the sugar. Drizzle with remaining olive oil.About 4 min
  4. Bake for 15 minutes until the dough is set. Scatter remaining grapes and sugar over the top, sprinkle rosemary, and bake 15 more minutes until golden and caramelized.About 30 min
  5. Remove from oven and immediately finish with flaky sea salt. Cool for 5 minutes before cutting. Serve warm.About 5 min

  • Concord or Muscat grapes are ideal for their intense, musky flavor.
  • The sugar sprinkled over the grapes caramelizes as they roast — don't skip it.
  • This is traditionally eaten at room temperature — it travels well for picnics.
