Grilled Plums with Honey Mascarpone

Grilling plums over high heat caramelizes their natural sugars and adds a subtle smokiness that transforms them into an effortlessly elegant dessert. Served warm over cool, honey-sweetened mascarpone with a handful of toasted pistachios, this is a five-ingredient summer dessert that takes twelve minutes and impresses every time.

Ingredients

  • large ripe but firm plums, halved and pittedPeaches or nectarines are excellent substitutes
  • oz mascarpone cheese, at room temperatureThick Greek yogurt for a lighter option
  • tbsp honey, dividedMaple syrup works too
  • cup toasted pistachios, roughly chopped
  • tbsp olive oil, for brushing
  • tsp fresh thyme leaves (optional)

Method

  1. Heat a grill or grill pan to high heat. Brush plum halves with olive oil.About 3 min
  2. Grill plums cut-side down for 3–4 minutes until grill marks form and plums are slightly softened. Flip and grill 2 more minutes. Drizzle with 1 tbsp honey in the last minute.About 7 min
  3. Meanwhile, whip mascarpone with remaining 2 tbsp honey and a pinch of salt until smooth.About 2 min
  4. Spread mascarpone on plates or a platter. Arrange warm grilled plums on top. Scatter pistachios and fresh thyme. Drizzle with any remaining honey.About 2 min

Tips

  • The grill must be very hot for good caramelization without steaming — don't rush the preheat.
  • Use plums that give slightly when pressed; too firm and they won't soften enough.
  • A drizzle of balsamic glaze instead of or alongside the honey is excellent.

Ring the changes

  • Add a pinch of cardamom to the mascarpone for a Middle Eastern-inspired version.
  • Serve with a slice of pound cake instead of — or alongside — the mascarpone.

Keeping it

Best eaten immediately. Grilled plums can be made up to 1 hour ahead and served at room temperature.
