New Potatoes with Butter and Dill
New potatoes boiled until just tender and tossed with butter, flaky salt, and an avalanche of fresh dill is a northern European classic that doesn't need improvement. The combination is perfect — waxy, just-cooked potatoes, melting butter, and the bright anise note of dill. It's a summer side dish that goes with everything from grilled salmon to roast chicken.
