Slow-Roasted Beefsteak Tomatoes in Olive Oil

Beefsteak tomatoes halved and roasted low and slow until they concentrate into intensely flavoured, jammy rounds bathed in garlicky, herb-scented olive oil. The process takes two hours but is entirely hands-off, and the result is a pantry powerhouse that makes everything it touches better. Ingredients

  • 4 large beefsteak tomatoes, halved through the equator
  • ½ cup olive oil
  • 6 cloves garlic, peeled and lightly smashed
  • 6 sprigs fresh thymeRosemary or oregano work
  • 1 tsp sugar
  • 1 tsp salt
  • ½ tsp black pepper, freshly cracked
  • ¼ tsp red pepper flakes (optional)

Method

  1. Preheat oven to 275°F. Arrange tomato halves cut-side up in a single layer in a large baking dish or rimmed baking sheet. Nestle garlic cloves and thyme sprigs among the tomatoes.About 5 min
  2. Drizzle olive oil over the tomatoes. Sprinkle with sugar, salt, pepper, and red pepper flakes if using. The sugar helps caramelisation without making them sweet.About 3 min
  3. Roast for 1 hour 45 minutes to 2 hours until the tomatoes are collapsed, wrinkled at the edges, and deeply concentrated but still moist. The oil in the pan should be fragrant and tinted red. Remove and cool slightly before serving.About 120 min
