Infused honey where a single super hot chilli steeps in warm honey for 24 hours, creating a condiment of extraordinary power and sweetness. Ingredients

  • 2 super hot chillies, gloves required, thinly sliced
  • 1 cup raw honey
  • 1 tbsp apple cider vinegar

Method

  1. SAFETY: Wear gloves. Do not touch your face.About 1 min
  2. Gently warm honey in a small saucepan over low heat until just liquid — about 5 minutes. Do not boil.About 5 min
  3. Remove from heat. Add sliced super hot chillies and apple cider vinegar. Stir gently.About 2 min
  4. Pour into sterilized jars, making sure chilli slices are submerged. Seal and let infuse at room temperature for 24 hours, then refrigerate. Ready to use — will intensify over time.About 3 min

Tips

  • The longer it infuses, the hotter it gets — taste after 24 hours and decide if you want more time.
  • A single drop on pizza is enough — this is extremely concentrated heat.
  • The vinegar prevents botulism risk and adds a gentle tang that improves the condiment.

Ring the changes

  • Add 3 sprigs of fresh thyme to the infusion for an herbal hot honey.
  • Use with habaneros instead for a fruity-hot honey that's slightly less extreme.

Keeping it

Refrigerate for up to 3 months. The honey may crystallize — warm gently in hot water to reliquefy.
