Hot Raspberry Soufflé

A dramatic and impressive hot soufflé with an intensely flavoured raspberry base, baked to a gorgeous rise and served the moment it emerges from the oven. Despite its daunting reputation, careful preparation makes this an achievable showstopper for a special dinner party.

Ingredients

  • 300 g fresh summer raspberries
  • 80 caster sugar
  • 1 tbsp lemon juice
  • 5 egg whites
  • 50 caster sugar (for whites)
  • 20 g unsalted butter, melted
  • 20 caster sugar (for dishes)

Method

  1. Preheat the oven to 200°C. Brush four 200 ml ramekins generously with melted butter, then coat with caster sugar, tipping out the excess.
  2. Cook the raspberries, 80 g sugar, and lemon juice in a saucepan over a medium heat for 5 minutes until soft. Blend until smooth and pass through a fine sieve. Cool completely.
  3. Whisk the egg whites in a clean bowl to soft peaks. Gradually add the 50 g caster sugar and whisk to stiff, glossy peaks.
  4. Fold one large spoonful of egg white into the raspberry base to loosen it. Gently fold in the remaining whites in three additions, keeping as much air as possible.
  5. Spoon the mixture into the prepared ramekins, filling to the top. Run your thumb around the inside edge to create a small ridge — this helps the soufflé rise straight.
  6. Bake for 12–14 minutes until well risen and golden on top. Serve immediately.

Tips

  • The raspberry base can be made up to a day ahead and stored in the fridge. Bring to room temperature before folding in the egg whites.
  • Never open the oven door during baking — the drop in temperature will cause the soufflé to collapse.

Ring the changes

  • Serve with a small jug of cold double cream poured into the centre at the table for a classic finish.

Keeping it

Soufflés must be served immediately from the oven. The base can be prepared ahead but the soufflé itself cannot be made in advance.
