Raspberry Pavlova

A showstopping British summer dessert with a crisp meringue shell, soft marshmallow centre, and a cloud of whipped cream piled high with fresh raspberries. The contrast of textures and the bright berry flavour make this a perennial favourite for garden parties and Sunday lunches alike.

Ingredients

  • 4 egg whites
  • 225 caster sugar
  • 1 tsp white wine vinegar
  • 1 tsp cornflour
  • 300 ml double cream
  • 2 tbsp icing sugar
  • 400 g fresh summer raspberries
  • 1 small handful fresh mint leaves

Method

  1. Preheat the oven to 130°C. Line a large baking tray with baking parchment and draw a 25 cm circle as a guide.
  2. Whisk the egg whites in a clean bowl until stiff peaks form. Gradually add the caster sugar a tablespoon at a time, whisking well between each addition, until the meringue is thick and glossy.
  3. Fold in the white wine vinegar and cornflour gently.
  4. Spoon the meringue onto the lined tray within the circle, building up the sides to create a slight well in the centre.
  5. Bake for 90 minutes until the outside is crisp and dry. Turn off the oven and leave inside to cool completely — at least 2 hours or overnight.
  6. Whip the double cream with the icing sugar until soft peaks form. Pile onto the cooled meringue base.
  7. Scatter the fresh raspberries generously over the cream and garnish with mint leaves. Serve immediately.

Tips

  • Ensure the bowl and whisk are completely grease-free before whisking egg whites, or they will not reach stiff peaks.
  • Cool the meringue slowly in the oven to avoid cracking — some cracking is normal and adds to the rustic charm.

Ring the changes

  • Drizzle a homemade raspberry coulis over the finished pavlova for an extra burst of flavour.

Keeping it

The meringue base can be made 1–2 days ahead and stored in an airtight container. Once assembled, serve within 2 hours.
