Fingerling Potato and Smoked Salmon Salad

Ingredients
- 1½ lbs fingerling potatoes, whole
- 4 oz smoked salmon, torn into pieces
- ½ cup crème fraîcheSour cream works
- 3 tbsp fresh dill, chopped, divided
- ¼ small red onion, very thinly sliced
- 2 tbsp capers, drained
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 2 cups arugula (optional)
- 1 tsp salt and pepper, to taste

Method
- Cook whole fingerlings in salted boiling water for 15 to 18 minutes until tender. Drain and cool slightly. Halve lengthwise.About 20 min

- Arrange arugula on a serving platter if using. Top with halved fingerling potatoes.About 2 min

Tips
