Ingredients

  • 1½ lbs fingerling potatoes, halved lengthwise
  • 3 tbsp olive oil
  • 4 cloves garlic, thinly sliced
  • ⅓ cup fresh flat-leaf parsley, roughly chopped
  • 1 tsp lemon zest
  • 1 tsp fresh rosemary, finely chopped
  • ¼ tsp red pepper flakes (optional)
  • 1 tsp salt
  • ½ tsp black pepper

Method

  1. Parboil fingerlings in salted water for 8 minutes until almost tender — not fully cooked. Drain and pat very dry.About 10 min
  2. Heat olive oil in a large heavy skillet over medium-high heat until shimmering. Add potatoes cut-side down in a single layer. Do not move for 6 to 8 minutes until deeply golden.About 8 min
  3. Flip potatoes. Add garlic and rosemary to the pan. Cook 4 to 5 minutes more until second side is golden and potatoes are fully tender.About 5 min
  4. Remove from heat. Add parsley, lemon zest, and red pepper flakes. Toss to coat.About 2 min
