Hearty Potato and Bean Stew

Ingredients

  • 2 lbs storage potatoes, peeled and cut into 1.5-inch chunks
  • 30 oz white beans, two cans, drained and rinsedKidney beans work too
  • 28 oz diced tomatoes, canned
  • 3 cups vegetable broth
  • 3 cups kale or cabbage, roughly chopped
  • 1 large yellow onion, diced
  • 5 cloves garlic, minced
  • 2 tbsp olive oil
  • 1½ tsp smoked paprika
  • ½ tsp dried rosemary
  • 1½ tsp salt
  • 1 tbsp lemon juice, for finishing

Method

  1. Heat olive oil in a large heavy pot over medium heat. Cook onion for 5 minutes. Add garlic, smoked paprika, and rosemary. Cook 1 minute.About 6 min
  2. Add potatoes, diced tomatoes, and vegetable broth. Bring to a boil, reduce heat, and simmer covered for 20 minutes until potatoes are almost tender.About 22 min
  3. Add white beans and continue simmering uncovered for 10 minutes. Lightly mash a few potato pieces against the side of the pot to thicken.About 10 min
  4. Add kale and cook 5 minutes until wilted. Season generously with salt.About 5 min
